BEEF STEW IN A RED WINE SAUCE

This hearty beef stew recipe is a fantastic meal prep option, or great as a dinner option for large families looking to eat healthy. This recipe as prepared will make 4 large servings!


INGREDIENTS:

  • 3lbs beef Chuck, cut into 2 inch pieces

  • Kosher salt

  • Black pepper

  • 2 tbsp extra virgin olive oil

  • 2 tbsp butter

  • 1 and 2/3 cup dry red wine

  • 1 tbsp tomato paste

  • 2 Yukon gold potatoes, cut into 1 inch pieces

  • 3 carrots, chopped into 1 inch pieces

  • 3 celery stalks, chopped into 1 inch pieces

  • 2 onions, chopped into quarters

  • 1 cup halved sun dried tomatoes

  • 15 grams minced garlic

  • 1 large rosemary sprig

  • 2 cup low sodium beef broth

  • 28 oz can crushed tomato


DIRECTIONS:

  • Pat beef dry with paper towel. Season with salt and pepper.

  • Heat oil in a large skillet over medium-high heat. Sear meat on all sides until golden brown. Transfer meat to slow cooker

  • Add butter and scrape skillet with a wooden spoon to loosen up meat scraps. Stir in tomato paste and red wine and simmer for one minute. Transfer to slow cooker

  • Add potatoes, onions, celery, carrots, sun dried tomatoes, garlic, rosemary, beef broth, and crushed tomatoes to slow cooker. Season with salt and cook on high until meat is tender, about 4-5 hours

  • Remove stalk of rosemary, and let stand before serving
