SLOW COOKER BEEF STEW IN A RED WINE SAUCE

Intro:

This hearty beef stew recipe is a fantastic meal prep option, or great as a dinner option for large families looking to eat healthy. This recipe as prepared will make 4 large servings!

Cook TIme: 4-5hrs

Ingredients:

  1. 3lbs beef Chuck, cut into 2 inch pieces

  2. Kosher salt

  3. Black pepper

  4. 2 tbsp extra virgin olive oil

  5. 2 tbsp butter

  6. 1 and 2/3 cup dry red wine

  7. 1 tbsp tomato paste

  8. 2 Yukon gold potatoes, cut into 1 inch pieces

  9. 3 carrots, chopped into 1 inch pieces

  10. 3 celery stalks, chopped into 1 inch pieces

  11. 2 onions, chopped into quarters

  12. 1 cup halved sun dried tomatoes

  13. 15 grams minced garlic

  14. 1 large rosemary sprig

  15. 2 cup low sodium beef broth

  16. 28 oz can crushed tomato


Directions:

  1. Pat beef dry with paper towel. Season with salt and pepper.

  2. Heat oil in a large skillet over medium-high heat. Sear meat on all sides until golden brown. Transfer meat to slow cooker

  3. Add butter and scrape skillet with a wooden spoon to loosen up meat scraps. Stir in tomato paste and red wine and simmer for one minute. Transfer to slow cooker

  4. Add potatoes, onions, celery, carrots, sun dried tomatoes, garlic, rosemary, beef broth, and crushed tomatoes to slow cooker. Season with salt and cook on high until meat is tender, about 4-5 hours

  5. Remove stalk of rosemary, and let stand before serving
