SLOW COOKER MONGOLIAN BEEF

INTRO: Yes, I’m crowding your feed with another delicious, Asian inspired meal prep option. This recipe takes 10 minutes to prepare and can be made in bulk! If you are trying to build muscle, serve over rice or noodles… if you’re trying to shred fat, serve as is! Either way, enjoy!


PREP TIME: 10 minutes

COOK TIME:  3 hours

DIFFICULTY: Beginner


INGREDIENTS: 

  • 1tbsp olive oil

  • 1.5LBS thinly sliced sirloin steak

  • 0.5 medium onion

  • 1 large bell pepper

  • 0.75 cup water

  • 0.5 cup zero sugar apricot jam

  • 0.3 cup low sodium soy sauce

  • 0.3 cup hoisin sauce

  • 1 tbsp minced garlic

  • 1 tsp minced ginger

  • 2 tbsp corn starch

  • Salt and pepper, to taste


DIRECTIONS: 

  1. Heat a large skillet on high heat with oil and add steak

  2. Sear steak on high for two mins each side

  3. Chop up steak, onions, and pepper, and add to slow cooker

  4. Whisk water, jam, soy sauce, hoisin sauce, garlic, ginger, and corn starch. Pour over steak in slow cooker

  5. Cook on low for 3 hours, or until the sauce has thickened.

  6. Serve as is, or over rice or noodles
