SLOW COOKER PEPPER STEAK OVER RICE

Intro:

Tired of consuming the same boring recipes every single week? I present yet another awesome tender and flavorful meal prep recipe that is not chicken! Don't sleep on slow cooker recipes, guys! :) enjoy


Prep Time: 15 mins

Cook Time: 3.5-6hrs

Servings: 8

Level: Intermediate


Ingredients: 

  1. 2 lb. round steak (cut into small strips)

  2. Kosher salt

  3. Freshly ground black pepper

  4. 1 green bell pepper

  5. 1 red bell pepper

  6. 1 medium white onion

  7. 2 in piece of ginger, quartered

  8. 2 garlic cloves, peeled and smashed

  9. 1 c low sodium beef stock

  10. 1/3 c low sodium soy sauce

  11. 1/4 c brown sugar

  12. 3 tbsp rice vinegar

  13. 3 tbsp sesame oil

  14. 2 tbsp cornstarch

  15. Cooked rice, for serving

  16. Sliced scallion, for garnish

  17. White sesame seeds, for garnish


Directions: 


  1. Season flank steak thoroughly with salt and black pepper. In a large Crock Pot combine steak, bell pepper, onions, ginger and garlic. In a mixing bowl or measuring cup combine beef broth, soy sauce, brown sugar, rice wine vinegar and sesame oil. Season to taste with salt and pepper before adding into the Crock Pot.

  2. Cover and cook on high for 3 1/2 hours to 4 hours or on low for 5 to 6 hours, until the steak is totally tender. Remove the garlic and ginger.

  3. Optional step: If you desire the sauce to be a bit thicker, in a small bowl combine cornstarch and 1/4 cup of the cooking liquid to create a slurry. Stir the slurry into the Crock Pot, cover and cook on high until thickened, an additional 10 to 15 minutes.

  4. Serve over rice and garnish with scallion and white sesame seeds.
