LOW CALORIE SMASH BURGER TACOS

Updated: Feb 16

Intro:

This is by far my favorite low calorie recipe to date. Not only do I plan on working this recipe into my weekly regimen, but I actually proudly prepared it for my parents after inviting them over for dinner just last week. They were shocked to learn just how lean this recipe actually is…. Because it does not taste it! Between the low carb tortillas and the extra lean ground beef, this recipe is good for both your taste buds and your fat loss journey!

Prep Time: 10 mins

Cook Time: 10 mins

Servings: 8

Level: Beginner

Ingredients:

BURGERS:

  1. 1lb 96% lean ground beef

  2. 8 low carb tortillas

  3. 1 package Taco Bell seasoning

TOPPINGS:

  1. 1 large onion

  2. 1 tomato

  3. Shredded lettuce

SAUCE:

  1. 6tbsp light mayo

  2. 3tbsp ketchup

  3. 1tbsp mustard

  4. 1tbsp relish

  5. 1 tsp white vinegar

  6. 1 tsp garlic powder

  7. 1tsp sugar

Directions:

BURGERS:

  1. Place chopped onions in a well oiled pan on low heat. Stir periodically until onions are caramelized.

  2. In a medium sized mixing bowl, combine Taco Bell seasoning packets and lean ground beef.

  3. Form 2oz meat balls. Place meat ball on low carb tortilla and smash it to form a thin patty. Make sure the entire tortilla is covered in meat.

  4. Put oil in a skillet. Place tortilla meat side down on skillet for 2-3 minutes or until brown. Flip taco so that the tortilla side is down and cook until the tortilla is slightly crispy.

SAUCE:

  1. In a small mixing bowl, combine light mayo, ketchup, mustard, relish, garlic powder, sugar, and white vinegar.

PREPARATION

  1. Top burger taco with sauce, onions, lettuce, and tomato… and enjoy
