I understand that eating clean is not always the most desirable. Healthy foods just don’t quite soothe the soul like pillowy pancakes and crumbly cookies do! Fortunately for you, we live in an obese world chock full of people whose health is at risk if things don’t change. As a result, the health food industry is booming… and there are a ton of delicious and healthy options available that you may not even know exist!
This recipe for low carb/ high fiber tacos is a must try, and has been a stable in mine and sam’s weekly rotation for quite some time now. Low carb tortillas are now all the rage… so do not feel guilty consuming them! They're extremely versatile, so you can use them to make healthier versions of tacos, burritos, and quesadillas guilt free!
Ingredients:
1 package Guerrero carb watch tortilla (feel free to use mission carb balance tortillas as an alternative)
1lb Al pastor or carne asada (We use the Fiesta taco kit, from stater bros meat department)
0.5 white onion, chopped
salsa, of choice
Taco Bell sauce
mango habanero salsa (optional, from stater bros produce section, near where their employees cut up fresh fruit)
Directions:
Cook meat in skillet or on grill. If you purchased the Fiesta Taco Kit from staters, a skillet works fine. If you didn't, you may need to cook your meat on the grill, or cut your meat up so that it will fit in a skillet. Cook until brown on either side and remove. Cut up into small pieces, if necessary
Chop up your onion
Heat up your tortillas
Add meat and toppings to tortilla
