LOW CALORIE BREAKFAST BURRITOS

OVERVIEW
This is a low calorie, high protein and high fiber take on a breakfast staple in the Baird household! We sub out ingredients that are usually much higher in fat and carbs with lower calorie alternatives without sacrificing taste! This breakfast burrito was better tasting than most I purchase while eating out.. and all for half the calories!

INGREDIENTS
3 Good & Gather (Target) apple and maple chicken sausage mini links
1/2 cup Jimmy Jean turkey sausages crumbles
1.5oz Ore Ida crispy mini tater tots
2oz reduced fat mozzarella cheese (substitute for stater bros fat free cheddar and mozzarella, if possible)
1/4 cup Daisy low fat cottage cheese
3/4 cup Egg whites
1 Mission carb balance tortillas (burrito sized)
4 tbsp Cary’s sugar free maple syrup
Seasonings of choice (for eggs)
DIRECTIONS
preheat air fryer to 400 degrees. Air fry tater tots for 12 mins
In a small pan, cook chopped up chicken maple sausages on medium heat.
In a separate, larger pan, add egg whites and seasonings of choice ( we use salt, pepper, onion powder, and garlic powder). Once eggs start to solidify, add cottage cheese and stir for one minute. Add turkey sausages and stir until fully cooked. Add cheese and stir into mixture until melted.
Warm up the tortilla and assemble burrito. Add egg mixture, tater tots, chicken sausages, and top with sugar free syrup.
